Vanilla goodness.

Simple moist cake speckled with vanilla bean. (love the flat top)
Recipe adapted from magnolia bakery.

170g self-raising flour
140g all purpose flour
226g butter
300g sugar
4eggs
250ml milk + 1tsp vanilla extract( i use vanilla bean!)

Preheat oven to 180
Combine and sieve flours together.Set aside.
Cream butter and sugar to light and fluffy.
Add eggs one at a time.
Add flour in 3 parts alternate with milk in 2 parts.
Fill cupcake liners and bake!

Flourless chocolate cake.


A very yummy cake adapted from Sarah's loft.

90g dark choc
45g unsalted butter
2eggs, separated
60g sugar
1/4tsp salt

Preheat oven to 175
Melt choc with butter
Whisk egg yolk with 20g sugar + 1/4tsp salt to thick and pale
Whisk egg white with 40g sugar to soft peak
Mix choc with eggyolk
Fold eggwhite into eggyolk with spatula
Bake for 30min!
Its normal for cake to sink in after cooling!

Blueberry Muffins

I prefer muffins to cupcakes just like how i prefer rustic loaves to soft buns.Who say muffins have to be tough and dry.I've found the perfect recipe for soft and moist blueberry muffins :D




Jordon Marsh's Blueberry muffins

2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder

1/2 cup unsalted butter (113g)
1 1/4 sugar

2 eggs
1 1/2 tsp vanilla extract

1/2 cup whole milk
2 cups blueberries

1. Preheat oven to 180C (350F).
2. Sieve flour, baking powder and salt together.
3. Cream butter and sugar until light and fluffy. 
4. Add the eggs, one at a time until incorporated. Add in vanilla extract.
5. Add the flour mixture in 3parts alternating with milk in 2 parts ending with flour mixture.
6. Fold in blueberries with spatula.
7. Fill muffin cups to 2/3 full.
8. Sprinkle the remaining 1/4 cup sugar over the muffin tops, bake 20-25min or until a toothpick inserted comes out clean.
